{Weekend Catch Up + A Simple Chicken Casserole}

Growing up in Northwest Iowa, the word casserole is something everyone is very familiar with. Thumb through a church cookbook, and you will find version after version! From tater tot casserole, pizza casserole (recipe coming later) to chicken casserole, the list goes on and on!

And as the weather gets colder, there is nothing better than a hot casserole from the oven! This recipe is one of my absolute favorites. Nothing makes me happier than when my mom makes her easy Chicken Casserole, so now I have taken it upon myself to make it!

And with a few simple ingredients, you have a recipe that is sure to please (a few ingredients aren’t pictured here).

Dolly’s Chicken Casserole:

1/2 cup celery
1/2 cup onion
1 can mushrooms

Saute celery, onions and mushrooms in butter.

Cook one box of Uncle Ben’s long grain and wild rice (I use the 90 sec bag kind – just use two bags). Mix together with one can cream of mushroom or chicken soup (I use chicken because my husband hates mushrooms!), two cups cubed chicken (I used my mom’s canned chicken, it is seriously the best invention EVER), 2/3 cup milk and 1 cup of cheddar cheese.

Warm up 5-7 minutes in the microwave to speed up cooking time, then place in oven for 15-30 minutes on 350 degrees. Add cheddar cheese on top.

Does it get any easier?! Enjoy!

In other news, I enjoyed a low key weekend where I finally accomplished something around the house. Ahem, cleaning! My house was in desperate need of some TLC, and because I am hosting a dinner party with some girlfriends this week I had plenty of motivation to do some serious cleaning.

This weekend I filled my boxes for Operation Christmas Child. This year I saw a cute glitter purse and matching necklace and just knew I had to buy it. I hope that whoever gets my gift is as girly as I am! I also added some practical items like crayons, markers, a notebook and pens. But a girl has to have a little fun in life!

  1. This recipe looks great, Ang! I agree, nothing beats a good casserole as the weather gets colder. I remember your mom’s cooking always being so good, so I’ll definitely be trying this out! 🙂 That restaurant looks awesome too…love small town style!

    1. Definitely try it and let me know what you think! When I have canned chicken on hand from my mom, it’s super easy as I don’t even have to cook up chicken. 🙂 Casseroles always remind me of home and bring comfort, especially when it’s cold. They are the best!

      It’s always fun to go to a small town restaurant down here – reminds me of being in Northwest Iowa. Hope you are doing well!
